Tuesday Topic: Cake!


This is a simple, but important question. Tomorrow is our oldest son's 11th birthday:
Do you have tried and true cake and icing recipes that you like? Certain ones that you always run to? I do for icing now (no powdered sugar!), and I've tried lots of cakes, but I don't have a favorite yet....

  1. We love the milks sponge cake recipe found in more with less. Any recipe that uses very few ingredients and causes you to heat to a boiling the milk (or water) in my experience turns out great even in the bush in a charcoal stove. We usually "dook" by hand in a grinder our regular sugar to make it fine (or blend it in a blender). We then add it to home-made yogurt (strained through a tshirt to be thick) or milk to make frosting. Sometimes we add color with local berry's or bark. Tasty and fun! Happy birthday to your eldest!

  3. here's my go to recipe when it comes to chocolate cake - even when i don't want to do the whole torte but (which is also delightful) - http://www.tasteofhome.com/recipes/light-chocolate-torte-with-raspberry-filling. and we put regular sugar in a blender and then make the icing ahead of time.. any heated icing, as Abuk says above, seems to work well with my own ground powdered sugar.

  4. What a great Tuesday topic! I'm late on the action, but here's my go-to chocolate cake:

    Black Magic Cake
    Sift together:
    2 cups flour
    2 cups sugar
    ¾ cup cocoa
    2 tsp. baking soda
    1 tsp. baking powder
    ½ tsp. salt

    Then add and mix:

    2 eggs
    1 cup black coffee (or one cup of water and 1 heaping tsp. instant coffee)
    1 cup milk
    ½ cup oil
    2 tsp. vanilla (or two packets vanilla granules)

    Pour into a greased and floured 11 x 15” cake pan. Bake at 350 *F for 30 minutes.

    Butter cream Icing

    Beat the following until smooth:

    1 lb. powdered sugar (450 g)
    ½ cup butter
    5-6 TBSP milk
    1 tsp. vanilla
